Tomorrows' Chili

TOMORROW'S CHILI
Submitted by: Barb B (It is called Tomorrow's Chili, but it is great today in the cold. Well, in southern NM we like it any day.)

Brown about a pound of ground beef with an onion, drain off the grease. Add 1-3 cans of chopped green chili (unless you can get fresh or home frozen, then put in what you like). Simmer a couple of minutes and add a can of cream of mushroom soup (or chicken, or favorite cream soup) {even 2 cans if you wish}, mix and keep simmering. Add a can of condensed milk (not sweetened) (if it is too thick add a little water at this point) and keep simmering while you cube a 2 lb box of Velveeta cheese. Add most of this to the simmering pot and stir until melted all the way.

Layer this mixture in a large casserole with tortilla chips (non-flavored are best), top with the rest of the Velveeta and put in a 350 degree oven for about 20 min. or until the Velveeta is totally melted on top. Not too brown (a little brown is okay if you like it -- I don't).

Serve with salad if you wish and you have a balanced meal.
