
ROAST STICKY CHICKEN
4 tsp. salt
In a small bowl, thoroughly combine all the spices. Remove giblets from
chicken, clean the cavity well and pat dry with paper towels. Rub the
spice mixture into the chicken, both inside and out, making sure it is
evenly distributed and down deep into the skin. Place in a resealable
plastic bag, seal and refrigerate overnight.
When ready to roast chicken, stuff cavity with onions, and place in a shallow baking pan. Roast uncovered, at 250 for 5 hours (yes 250 degrees for 5 hours) after the first hour, baste chicken occasionally (every half hour or so) with pan juices will start to caramelize on the bottom of pan and the chicken will turn golden brown.
If the chicken contains a pop-up therometer, ignore it. Let chicken rest 10 minutes before carving.
CHILI DOG ENCHILADAS
2 (15 ounce) cans chili, with or without beans (Hormel is good)
Spread 1 can of chili in bottom of 9x13 baking dish. Roll up franks in tortillas & place seam side down in baking dish on top of chili. Top with remaining can of chili. Spread cheese evenly over top. Cover baking dish with oven-proof lid or aluminum foil and bake at 425F for 30 minutes.

CHILI DOG CASSEROLE
1-2 lbs ground beef
Brown ground beef, drain & discard fat. Add tomato sauce & chili seasoning and mix well. Spread in bottom of baking dish. Cut hotdogs into rounds and layer over ground beef mixture. Top with cheese and cook 10-15 minutes at 350F (or microwave it) until cheese melts.

1 (16 ounce) package beef frankfurters (or your favorite kind)
10 (8 inch) flour tortillas
1 (8 ounce) package shredded Cheddar cheese
1. Use Hormel�s low-fat turkey chili, low-fat franks and fat-free tortillas with good results.
2. Spread crushed corn chips on the chili before adding cheese. (I think I would just serve them on the side.)
3. Spread mustard on the wieners before rolling them up.
4. Serve cole slaw on the side.

1 pkg chili seasoning
1 lb pkg frankfurters
Shredded Mexican blend cheese
mustard
chopped onions
pickle relish
sour cream
cole slaw
Layer your favorite toppings as you would a real chili dog. Or set out the toppings and let everyone add their own to their serving. Good on buns too. But low-carb dieters should eat it as a casserole and omit the bread.
Use a chili dog sauce (Save-A-Lot has a good low-carb one) in place of the tomato sauce and chili seasoning.
